I’m not sure if this would interest you, but I did hear of a pick on the last MacBreak Weekly podcast about a $99 app that supposedly does this type of thing with images:
Ha, I googled “good tutorials on making seamless patterns in AI” and came across this blog and then the comments. That blog that Jeff posted looks like it has some great tips.

Keep in mind that I’m not a Mac user, or AI user (it’s Ubuntu and Inkscape for me), so it might not even be close to what you’re after.
